  • 8.5 oz crushed tomatoes
  • 6 oz red lentils
  • 2 cups baby spinach
  • ½ cup fresh parsley
  • 1 tbsp lemon juice

  1. In a pot over medium heat, sauté diced onion and minced garlic until fragrant.
  2. Add sliced carrots, celery, and cubed potatoes; sauté for about 5 minutes.
  3. Stir in cumin, turmeric, salt, pepper, and grated ginger.
  4. Pour in vegetable broth, tomato paste, and crushed tomatoes; stir well.
  5. Mix in dry red lentils and bring to a gentle boil; then reduce heat to low and cover.
