  • 175 g unsalted butter (softened)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for buttercream)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with light brown sugar, cornflour, and spices until tender.
  2. Make the crumble by mixing plain flour, light brown sugar, and cinnamon with unsalted butter until crumbly; bake until golden.
