  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold, cut into cubes)
  • 110 g water
  • 1 kg apples (Pink Lady, Royal Gala or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt (for filling)
  • 2½ tbsp water (for filling)
  • Vanilla ice cream (to serve)

Instructions

  1. Prepare the Dough: In a large bowl, mix flour, granulated sugar, and salt. Add cold butter cubes and blend until crumbly. Gradually add cold water until the dough forms. Wrap in plastic wrap and refrigerate.
  2. Make the Filling: Peel and slice apples thinly. In a saucepan, melt butter over medium heat; add apples, brown sugar, cinnamon, cornstarch, salt, and water. Cook until apples are tender.
  3. Assemble: Roll out the chilled dough for the bottom crust in a pie dish; fill with apple mixture. Roll out another piece for the top crust; place it over the filling.
  4. Bake: Preheat oven to 180°C (350°F). Brush top with an egg wash (beaten egg + agua) and sprinkle with brown sugar. Bake for about 80 minutes until golden.
  5. Serve: Allow cooling slightly before slicing; serve warm with vanilla ice cream.
