  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F). Toss butternut squash with olive oil, salt, and pepper; spread on a parchment-lined baking sheet. Roast for 15-20 minutes until tender.
  2. On another sheet, toss Brussels sprouts similarly; roast for 20-30 minutes until crispy.
  3. Boil salted water in a large pot. Cook bow tie pasta according to package instructions until al dente; drain and reserve some pasta water.
  4. In a skillet over medium heat, brown sliced turkey sausage in olive oil for about 5-7 minutes.
  5. Add minced garlic to the skillet; sauté until fragrant. Stir in butter until melted; add cooked pasta along with seasonings.
  6. Gently fold in roasted vegetables and fresh thyme before serving hot.
