  • 4 slices sourdough or artisan bread
  • 2 tablespoons butter, softened
  • 1 cup fresh blackberries
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Pinch of salt
  • 4 oz brie cheese, thinly sliced

Instructions

  1. In a saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and salt. Cook for about 5 minutes until the mixture thickens. Remove from heat and let cool.
  2. Heat a non-stick skillet over medium-low heat.
  3. Butter one side of each slice of bread. Place two slices in the skillet, buttered side down. Layer with brie and spoon some blackberry mixture on top. Add another layer of brie and cover with remaining bread slices, buttered side up.
  4. Cook for 2-3 minutes per side until golden brown and crispy, pressing gently with a spatula.
  5. Let rest for one minute before slicing diagonally and serving warm.
