  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium bowl, mix together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until blended. Stir in one cup of chocolate chips.
  4. Gradually add the dry mixture into wet ingredients while stirring gently until just combined.
  5. Grease an 8" x 4" loaf pan with oil spray and pour in the batter. Sprinkle remaining chocolate chips on top.
  6. Bake for about 50-60 minutes until a toothpick inserted comes out clean. Allow to cool slightly before slicing.
