  • 4 Tablespoons olive oil, divided
  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • ½ cup frozen yellow corn, thawed and drained
  • 3 Tablespoons honey or maple syrup for vegan option
  • 3 Tablespoons lime juice
  • 3 Tablespoons fresh cilantro, chopped
  • Corn or flour tortillas

Instructions

  1. Preheat oven to 425°F.
  2. Toss sweet potatoes with olive oil and spices in a bowl; spread on a baking sheet.
  3. Roast for 20 minutes, stirring halfway.
