  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 4 salmon filets (about pounds)
  • 2 medium peaches (pitted, thinly sliced)
  • 1 teaspoon garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a medium bowl, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Set aside half of the marinade.
  2. Place the salmon fillets in a resealable bag and pour in the remaining marinade. Seal and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Heat oil in an oven-safe skillet over medium-high heat and sear the salmon fillets skin side up for about 2-3 minutes until golden brown.
  5. Flip the fillets to skin side down and add sliced peaches around them.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake in the preheated oven for 12-15 minutes or until the salmon reaches an internal temperature of 145°F.
  8. Serve immediately garnished with parsley.
