  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger (minced)
  • 4 cloves garlic (minced)
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • Salt and pepper, to taste

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat; sear chicken skin-side down for 5-7 minutes until golden brown.
  3. Flip chicken and add soy sauce, brown sugar, garlic, and ginger; stir to combine.
  4. Pour in chicken broth to cover the chicken; bring to a boil then reduce heat and simmer covered for about 20 minutes.
  5. For rice: rinse jasmine rice, combine with water in another pot, bring to boil, cover, and reduce heat until fluffy.
  6. Optional: thicken broth with cornstarch slurry if desired.
  7. Serve sliced chicken over rice with broth ladled on top; garnish with green onions and cilantro.
