  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, rub with olive oil, salt, and pepper. Bake for about 45 minutes until tender.
  2. In a skillet over medium heat, brown the ground beef and drain excess fat. Stir in taco seasoning and simmer for about five minutes.
  3. Cut a slit in each baked potato and gently open them up. Fill with seasoned beef and top generously with shredded cheddar cheese.
  4. Return to the oven for an additional five minutes until cheese is melted.
