- 2 large boneless, skinless chicken breasts
- 3 cups chicken broth
- 4 oz cream cheese, softened
- 1 cup shredded Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 oz uncooked pasta (elbow macaroni, shells, or preferred shape)
- ½ cup shredded mozzarella cheese (optional)
- Fresh parsley or basil, chopped (for garnish)
- Red pepper flakes (optional, for garnish)
- Place chicken breasts in the bottom of a crockpot. Sprinkle with minced garlic, Italian seasoning, salt, and pepper.
- Pour chicken broth over the chicken until fully covered. Cover and cook on low for 4–5 hours until fork-tender.
- Shred the chicken using two forks and return to the pot. Stir in cream cheese and Parmesan until melted into a creamy sauce.
- Add uncooked pasta to the mixture, stirring well. Cover and cook on high for 30–45 minutes until pasta is al dente.
- Optionally, sprinkle mozzarella cheese on top during the last few minutes of cooking to melt before serving.
