  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz uncooked pasta (elbow macaroni, shells, or preferred shape)
  • ½ cup shredded mozzarella cheese (optional)
  • Fresh parsley or basil, chopped (for garnish)
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Place chicken breasts in the bottom of a crockpot. Sprinkle with minced garlic, Italian seasoning, salt, and pepper.
  2. Pour chicken broth over the chicken until fully covered. Cover and cook on low for 4–5 hours until fork-tender.
  3. Shred the chicken using two forks and return to the pot. Stir in cream cheese and Parmesan until melted into a creamy sauce.
  4. Add uncooked pasta to the mixture, stirring well. Cover and cook on high for 30–45 minutes until pasta is al dente.
  5. Optionally, sprinkle mozzarella cheese on top during the last few minutes of cooking to melt before serving.
