  • ½ cup sour cream
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Mix both bowls together until combined.
  2. Divide the batter between two greased 8-inch round pans and bake for 35 minutes. Let cool completely before trimming.
  3. For the mousse, heat one cup of cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch until pale; add hot cream gradually to temper the yolks. Cook until thickened.
  4. Melt dark and white chocolate separately into custards; fold in whipped cream until airy.
  5. Assemble by layering cake with dark mousse followed by white mousse; chill for at least 4 hours.
  6. Prepare ganache by heating cream and pouring over chopped milk chocolate; stir until smooth.
  7. Once set, pour ganache over the cake and decorate as desired.
