  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup cold unsalted butter, cubed
  • 100g dark chocolate (at least 60%), chopped
  • 1 cup shelled unsalted pistachios
  • 1/2 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 large egg yolk
  • 12 tablespoons cold milk (as needed)
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1/4 cup whole milk
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon almond extract (optional)
  • Chopped or whole roasted pistachios for garnish

Instructions

  1. For the tart shell, whisk together flour, cocoa powder, powdered sugar, and salt. Blend in cold butter until crumbly. Add egg yolk and milk until dough forms; chill.
  2. Preheat oven and roll out the chilled dough into a tart pan. Blind bake until firm.
  3. Prepare the bottom ganache by heating cream and pouring it over chopped chocolate; stir until smooth.
  4. Blend pistachios with milk until smooth. Heat mixture on the stove with sugar and cornstarch until thickened.
  5. Pour pistachio layer over ganache; let set in the fridge.
  6. For the top ganache, heat cream, mix with chocolate and butter until glossy; pour over the pistachio layer.
  7. Chill thoroughly before serving, garnishing with roasted pistachios.
