  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallow crème
  • 2 cups semi-sweet chocolate chips for topping
  • 2 tablespoons coconut oil or butter

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. 2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. 3. Beat in eggs one at a time followed by vanilla extract.
  4. 4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  5. 5. Fold in chocolate chips then press the mixture evenly into the prepared baking dish.
  6. 6. Bake for about 20-25 minutes or until golden brown on top. Allow to cool completely.
  7. 7. Spread vegan marshmallow crème over the cooled cookie base.
  8. 8. Melt semi-sweet chocolate chips with coconut oil in intervals until smooth; pour over marshmallow layer and spread evenly.
