  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter, granulated sugar, and vanilla until smooth. Add eggs one at a time.
  4. Gradually mix in dry ingredients and milk until just combined.
  5. In a separate bowl, combine chopped apples with brown sugar and cinnamon.
  6. Layer half of the batter in the pan, add half of the apple mixture, then create layers with remaining batter and apples.
  7. Bake for 45 to 55 minutes or until a toothpick inserted comes out clean.
  8. Let cool before glazing with a simple mixture of confectioners’ sugar, cinnamon, and water.
