  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition; then stir in vanilla and coconut extracts.
  5. Alternate adding dry ingredients and coconut milk to the butter mixture until smooth.
  6. Pour batter into prepared pans and bake for 25-30 minutes or until golden brown.
  7. Cool cakes completely before frosting.
  8. For frosting, beat cream cheese and powdered sugar until smooth; fold in whipped cream until peaks form.
