  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half (or whole milk)
  • 8 oz Cool Whip (for topping)
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a greased 9×13-inch baking dish.
  2. In a bowl, beat softened cream cheese and powdered sugar until smooth. Mix in coconut extract and fold in one container of Cool Whip. Spread this mixture over the crust.
  3. In another bowl, whisk together pudding mix and half-and-half until thickened. Pour over the cream cheese layer and smooth it out.
  4. Cover and refrigerate for at least six hours or overnight. Before serving, spread remaining Cool Whip on top and sprinkle with toasted coconut.
