  • 5 eggs
  • 1/2 cup powdered sugar
  • 8 oz mascarpone
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup vanilla extract (alcohol-free)
  • 1 tsp cinnamon
  • 2 cups coconut flakes
  • 24 ladyfingers

Instructions

  1. Separate the eggs and whisk egg yolks with powdered sugar until pale.
  2. Mix in mascarpone, coconut cream, and half of the coconut milk until smooth.
  3. Whip heavy cream with remaining powdered sugar until stiff peaks form; gently fold into the mascarpone mixture.
  4. Combine sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon in a bowl.
  5. Dip ladyfingers briefly into soaking liquid and layer them in a dish.
  6. Spread half of the cream mixture over soaked ladyfingers; repeat layers.
  7. Top with coconut flakes and chill for at least 12 hours before serving.
