  • 1/4 cup unsalted butter, softened
  • 1/8 teaspoon salt
  • 1 3/4 cup powdered sugar
  • 1/2 cup dark chocolate chips
  • 2 tablespoons heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with foil, spraying it with nonstick baking spray.
  2. In a bowl, whisk melted butter and dark cocoa powder until smooth.
  3. In another bowl, beat together granulated sugar, eggs, instant espresso powder, and vanilla extract until light and fluffy.
  4. Stir together salt, baking powder, and flour in a separate bowl; then gently combine this dry mixture into the wet ingredients until just mixed.
  5. Spread the batter evenly into the prepared pan and bake for 25-28 minutes or until a toothpick inserted comes out slightly sticky.
  6. Allow brownies to cool completely before making the frosting by mixing heavy cream with instant coffee granules until dissolved, then beating with softened butter and powdered sugar until fluffy.
  7. Prepare the chocolate ganache by melting dark chocolate chips with heavy cream in the microwave; spread over cooled frosted brownies.
