  • 1 medium Red Pepper
  • 200 grams Mushrooms (mixed varieties)
  • 3 cloves Garlic (minced)
  • 1 small Cauliflower (cut into florets)
  • 1 medium Leek (diced)
  • 150 grams Vegan Grated Cheese
  • 1 cup Oat/Almond Milk
  • 2 tablespoons Tomato Purée
  • 2 tablespoons Tamari
  • 1 teaspoon Dried Sage
  • 1 teaspoon Dried Thyme
  • 2 tablespoons Vegan Butter
  • 2 tablespoons Cornflour

Instructions

  1. Prepare the Filling: Heat olive oil in a large pan over medium heat. Sauté onions until translucent, then add carrots, red pepper, and mushrooms until softened.
  2. Add Seasonings: Stir in garlic, tomato purée, tamari, sage, and thyme; cook for 2-3 minutes.
  3. Cook Cauliflower: Steam or boil cauliflower florets until tender. Drain and mash with vegan butter, oat/almond milk, and cornflour until creamy.
  4. Assemble the Pie: Spread vegetable filling in a baking dish and top with creamy cauliflower cheese.
