  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup toasted pecans (roughly chopped)
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 3-5 minutes until fragrant. Set aside to cool.
  2. In a large bowl, beat softened butter until fluffy. Add white and brown sugar; mix until well combined.
  3. Incorporate eggs and vanilla extract; blend until smooth.
  4. In another bowl, combine flour, salt, baking powder, and baking soda. Gradually mix into wet ingredients without overmixing.
  5. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and semi-sweet chocolate chips.
  6. Chill the dough for at least one hour in the fridge.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Scoop generous balls of dough onto prepared sheets with spacing for spreading.
  9. Bake for 12-14 minutes until golden around the edges but slightly shiny in the center.
