  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 12 oz penne or fettuccine pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and Cajun seasoning; sear until golden brown on both sides (5-6 minutes per side). Remove and let rest.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add more Cajun seasoning and stir.
  4. Pour in heavy cream and chicken broth, scraping any browned bits from the skillet. Let simmer before stirring in Parmesan cheese until melted.
  5. Slice the chicken and add it along with the cooked pasta to the skillet; toss to combine.
