  • 12 stalks celery (chopped)
  • 1/2 medium yellow onion (chopped)
  • 4 cups low-sodium chicken stock or broth
  • 1 cup cream or non-dairy alternative
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • 45 cloves garlic (minced)
  • 1 Tablespoon Italian seasoning
  • salt and black pepper to taste
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • pinch red pepper flakes (optional)
  • 12 Tablespoons cornstarch

Instructions

  1. Place chicken, carrots, celery, onion, garlic, Italian seasoning, salt, and pepper in a slow cooker.
  2. Pour in the chicken stock and stir gently.
  3. Cook on low for 6–8 hours or high for 4 hours.
  4. Shred the chicken once cooked.
  5. Whisk cream with cornstarch until smooth; stir into the soup along with gnocchi and spinach.
  6. Cook on high for an additional 30–45 minutes until heated through.
