  • 1 small butternut squash (about 3 cups), peeled and diced
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tbsp plant-based butter
  • 2 cloves garlic, minced
  • ½ cup nutritional yeast
  • ¼ cup plant-based cream
  • 2 cups baby spinach, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
  2. In a large saucepan over medium heat, melt plant-based butter and sauté minced garlic for about a minute. Add orzo pasta, toasting lightly for around 2 minutes.
  3. Pour in vegetable broth and bring to a simmer. Cook for approximately 10–12 minutes until orzo is tender, stirring occasionally.
  4. Stir in nutritional yeast and plant-based cream until melted. Fold in the chopped spinach just until wilted.
  5. Gently mix in the roasted butternut squash, adjusting seasoning as needed before serving warm.
