  • 1 head roasted garlic
  • 2 tablespoons olive oil
  • 1 pound chicken breast
  • 8 ounces mushrooms (baby Bella or white)
  • 2 cups Alfredo sauce
  • 1 cup half & half
  • 9 ounces lasagna noodles (or short pasta shapes)
  • Salt and pepper to taste
  • ½ cup Parmesan cheese (for topping)

Instructions

  1. Roast the garlic by preheating your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  2. In a large pot over medium heat, sauté sliced mushrooms in olive oil until golden brown (about 5-7 minutes).
  3. Stir in cooked chicken breast. If using raw chicken, cook it thoroughly first.
  4. Add Alfredo sauce and half & half, stirring until combined and bubbling.
  5. Mix in broken lasagna noodles and cook according to package instructions until al dente (around 10 minutes).
  6. Season with salt, pepper, and nutmeg if desired before serving hot with Parmesan cheese sprinkled on top.
