  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped) or 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line baking trays with parchment paper. Roll and prick puff pastry sheets, then cover and weigh down.
  2. Bake for 35-45 minutes until golden brown. Cool completely.
  3. Trim edges of baked pastry to fit an 8×8-inch pan.
  4. In a saucepan, whisk sugar, cornstarch, and salt together. Warm milk separately over medium heat.
  5. Temper egg yolks by adding warm milk gradually into the sugar mixture while whisking.
  6. Combine mixtures back on the stove and cook until thickened, about 5-7 minutes.
  7. Remove from heat and whisk in vanilla seeds and cold butter until smooth.
  8. Layer custard between puff pastry pieces in the pan, cover tightly, and refrigerate for at least four hours or overnight before slicing.
