  • 1 can black beans (rinsed and drained)
  • 1 cup corn
  • 1 medium red bell pepper (diced)
  • 4 stalks green onions (diced)
  • 1 small jalapeno pepper (diced)
  • 1/2 cup fresh cilantro (chopped)
  • 1 cup Monterey Jack cheese (shredded)
  • Egg roll wrappers
  • Vegetable oil for frying
  • 1 cup ranch dressing
  • 1 ripe avocado (mashed)
  • 1/2 cup buttermilk
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. In a large bowl, combine cooked chicken, black beans, corn, red bell pepper, green onions, jalapeno pepper, cilantro, and Monterey Jack cheese.
  2. Place an egg roll wrapper on a clean surface. Spoon filling onto the center. Fold the bottom corner over the filling, tuck in the sides tightly, and roll away from you to seal.
  3. Heat vegetable oil in a deep pan to 350°F. Fry eggrolls until golden brown (about 3-5 minutes per side).
  4. For the dipping sauce, mix ranch dressing with mashed avocado, buttermilk, lime juice, garlic powder, and onion powder until smooth.
  5. Serve hot with creamy dipping sauce.
