  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying

Instructions

  1. Prepare your coating station with four shallow bowls: one for flour mixed with chili powder, salt, and pepper, one for whisked eggs and water, one for coconut flakes, and one for panko bread crumbs.
  2. Coat each chicken tender in the seasoned flour, dip it into the egg wash, then roll in the coconut flakes followed by panko bread crumbs.
  3. Heat oil in a skillet over medium heat. Fry the coated tenders in batches for about 2-3 minutes per side until golden brown.
  4. Drain on a wire rack and serve warm with sweet chili sauce.
