Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil carrot rounds in salted water for about 10–12 minutes until fork-tender.
  3. Drain and cool slightly before smashing each round on the baking sheet.
  4. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese.
  5. Roast for 20–25 minutes, flipping halfway through for even crispiness.
  6. Garnish with fresh parsley and serve hot.
