  • 3/4 cup Granulated Sugar (or brown sugar)
  • 1 Vanilla Bean (or 2 teaspoons vanilla bean paste)
  • 6 large Egg Yolks
  • 1 pinch Salt
  • 1 cup Whipped Cream (lightly sweetened)
  • 1 cup Fresh Berries (strawberries or raspberries)
  • 1 tablespoon Cocoa Powder

Instructions

  1. In a medium saucepan over medium heat, combine the heavy cream and whole milk. Split the vanilla bean, scrape the seeds into the mixture, and add the pod. Heat until steaming but do not boil.
  2. In a separate bowl, whisk together egg yolks, sugar, and salt until light in color.
  3. Slowly pour half of the warm cream mixture into the egg yolk mixture while whisking continuously. Return everything back to the saucepan.
  4. Cook on low heat, stirring constantly until thickened (about 10 minutes).
  5. Strain through a fine-mesh sieve into ramekins or cups. Cover directly with plastic wrap and refrigerate for at least four hours or overnight.
  6. Before serving, top with whipped cream, fresh berries, and a dusting of cocoa powder.
