  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil (plus more for drizzling)
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon flaky sea salt

Instructions

  1. In a large mixing bowl, dissolve the yeast and honey in warm water. Let sit for about 5 minutes until foamy.
  2. Add flour, salt, and olive oil to the yeast mixture. Stir until a sticky dough forms. Cover and let rise in a warm place for 45–60 minutes.
  3. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
  4. Spoon the risen dough into each muffin cup, filling three-quarters full.
  5. Drizzle olive oil over the tops and sprinkle with rosemary, minced garlic, and flaky salt.
  6. Bake for about 18–20 minutes until golden brown. Rotate the pan halfway through baking for even cooking.
  7. Allow to cool slightly in the tin before transferring to a wire rack.
