  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce alternative
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Combine the chicken breasts, chicken broth, coconut milk, red curry paste, soy sauce, diced onion, minced garlic, and sliced red bell pepper in your slow cooker.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  3. Remove the chicken and shred it with two forks before returning it to the soup.
