  • 2 cups shredded sharp cheddar cheese
  • 1 ½ cups sour cream
  • ¼ cup unsalted butter (melted)
  • 1 small yellow onion (diced)
  • 2 teaspoons minced garlic
  • ½ cup chicken broth
  • 2 large yellow onions (for topping)
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup whole milk (room temperature)
  • 4 cups vegetable oil (for frying)

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet over medium heat, melt ¼ cup of butter and sauté diced onions and garlic until soft and fragrant.
  4. In a large bowl, combine thawed hash browns, sautéed onions and garlic, cheddar cheese, sour cream, flour, salt, black pepper, cayenne pepper, chicken broth, and milk; mix well.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. For the crispy topping, heat vegetable oil in another skillet and fry thinly sliced onions until golden brown; drain on paper towels.
  7. Top the potato mixture with fried onions before baking for about 50 minutes or until golden brown and bubbly.
