  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs for garnish
  • Extra Parmesan cheese for topping
  • Crispy fried onions (optional, for extra crunch)

Instructions

  1. Sauté sliced onions in butter and olive oil over medium heat until caramelized.
  2. Slice Yukon Gold potatoes into ¼-inch rounds.
  3. Preheat oven to 375°F (190°C) and grease a baking dish.
  4. Layer half the potatoes, half the onions, and cheese in the dish; repeat layers.
  5. Whisk together heavy cream, salt, pepper, and thyme; pour over the layered bake.
