  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • Fresh Parsley (chopped)
  • 1 tbsp Flour + 3 tbsp water
  • 2 tsp Salt
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg
  • 1 tsp Sugar
  • 1 tsp Pepper
  • 2 tsp Oregano

Instructions

  1. Thinly slice the onions and sauté them in olive oil over medium heat for 30–40 minutes until caramelized.
  2. In the same skillet, whisk flour into melted plant-based butter, then gradually add heavy cream to create a smooth béchamel sauce.
  3. Stir in two-thirds of the caramelized onions and season with salt, pepper, parsley, and Parmesan cheese.
  4. Boil salted water and cook cavatappi until just shy of al dente; drain.
  5. Combine pasta with béchamel sauce until well-coated.
  6. Transfer to a baking dish, top with remaining onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden brown.
  7. Serve immediately and enjoy!
