  • 1 1/2 cups chopped pecans (toasted)
  • 1/4 cup unsalted butter (for glaze)
  • 1/3 cup brown sugar (for glaze)
  • 2 tbsp milk or plant-based milk (for glaze)
  • 3/4 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Toast pecans on a baking sheet for about 5–7 minutes.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  5. Fold in cooled toasted pecans.
  6. Scoop tablespoons of dough onto parchment-lined sheets with space in between.
  7. Bake for about 10–12 minutes until golden around edges; let cool on the baking sheet for five minutes before transferring to a wire rack.
  8. For the glaze: Melt butter and brown sugar in a saucepan; stir in milk until smooth, then whisk in powdered sugar.
  9. Drizzle glaze over cooled cookies.
