  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh herbs: parsley, chives, thyme

Instructions

  1. Peel and cube the Yukon Gold potatoes; rinse under cold water.
  2. In a large pot over medium heat, melt butter or olive oil and sauté the chopped onion for 5-7 minutes until softened.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Sprinkle flour over the mixture and stir for about two minutes to create a roux.
  5. Gradually whisk in broth while scraping any bits from the pot.
  6. Add potato cubes and bring to a simmer; cover and cook for 15-20 minutes until tender.
  7. Blend half of the soup mixture until smooth; return it to the pot.
  8. Lower heat before adding milk and cream (if using) along with chopped herbs.
  9. Gradually incorporate cheddar cheese until melted; season to taste with salt and pepper.
