  • 1 yellow onion (diced)
  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi (Italian potato dumplings)
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed out and rinsed)
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • Sea salt + black pepper to taste
  • 1/3 cup fresh Italian parsley (roughly chopped)

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottom pot until onions are translucent.
  2. Add minced garlic and cook briefly before incorporating rinsed jackfruit, thyme, bay leaves, and apple vinegar. Simmer until vinegar evaporates.
  3. Whisk together whole wheat flour and vegetable stock; add to the pot and stir well.
  4. Cook for about 45 minutes until jackfruit is fork-tender.
  5. Stir in gnocchi, diced tomatoes, and thawed peas; cook until gnocchi float to the top.
  6. Season with sea salt and black pepper to taste before serving.
