  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can refried beans (16 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

  1. Preheat your oven to 375°F. Lightly spray two baking sheets and arrange three tortillas on each sheet. Bake for 3-5 minutes until golden and crispy.
  2. In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.

  4. Heat refried beans in a microwave-safe bowl for about 2 minutes until warm.
  5. On one tortilla, spread a thin layer of beans, add one-third of the seasoned beef, and layer another tortilla on top.
  6. Spread enchilada sauce over this second layer, sprinkle with cheeses, and finish with toppings like tomato and olives.
  7. Repeat layering process with remaining tortillas; bake for an additional 5 minutes until cheese is melted.
