  • 2 tbsp lime juice
  • Lime zest from 1 lime
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • 3/4 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/41/2 tsp chipotle chili powder (optional for more heat)
  • 1/4 tsp pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, diced, seeds separated
  • 2 tbsp finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tbsp lime juice for salsa
  • 1/4 tsp ground cumin for salsa
  • 1/4 tsp salt for salsa
  • 1/8 tsp pepper for salsa

Instructions

  1. Marinate the Chicken: Mix olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if desired), and pepper in a bowl. Add pounded chicken breasts and marinate for at least 30 minutes.
  2. Prepare the Avocado Salsa: In a bowl, combine chopped avocados, quartered tomatoes, fresh corn kernels, red onion, red bell pepper, diced jalapeño, cilantro, minced garlic (or garlic powder), lime juice along with cumin and salt. Gently mix.
  3. Cook the Chicken: Heat a skillet over medium-high heat with a splash of olive oil. Cook marinated chicken for about 5 minutes on each side until the internal temperature reaches 165°F.
