  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1 tablespoon olive oil
  • 1/2 cup panko breadcrumbs
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). In a medium saucepan, heat olive oil over medium heat. Add fresh cranberries and cook until they soften, about 5 minutes.
  2. Stir in honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook for another 3-4 minutes until thickened.
  3. Cut pockets in each chicken breast and stuff them with Brie cheese and the cranberry mixture. Secure openings with toothpicks.
  4. Sear stuffed chicken in an oven-safe skillet over medium-high heat for 2-3 minutes on each side until golden brown.
  5. Mix panko breadcrumbs with melted butter and top each chicken breast before placing the skillet in the oven.
  6. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C). Allow to rest for 5 minutes before serving.
