  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together dry rub ingredients and coat the chicken evenly.
  3. In a large oven-safe sauté pan, cook bacon until crispy (optional) and remove it while retaining some fat.
  4. Sear the seasoned chicken in the same pan until browned on both sides.
  5. Sauté chopped cabbage in the remaining fat for 2-3 minutes until slightly wilted.
  6. Add sliced potatoes, onions, chicken stock, and stir well.
  7. Combine everything in the pan and arrange seared chicken on top.
  8. Bake for 45–50 minutes until the chicken reaches an internal temperature of 165°F (75°C).
