  • 1 package gnocchi (optional)
  • Olive or avocado oil
  • 2 links spicy Italian sausage, crumbled
  • 2 leeks, sliced
  • 1 fennel bulb, sliced
  • 1 large parsnip, diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • 4 cloves garlic, pressed
  • 1 can whole tomatoes, chopped
  • 1 can navy beans, drained and rinsed
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Fresh parsley and lemon juice for garnish

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. Heat oil in a large pot over medium-high heat. Add crumbled sausage and brown for several minutes.
  3. Stir in leeks, fennel, parsnip, carrot, celery, salt, and pepper; sauté until tender.
  4. Add garlic and cook briefly before mixing in tomatoes and navy beans.
  5. Pour in the chicken broth; stir well. Cover and simmer for about 20 minutes until vegetables are tender.
  6. Stir in kale and lemon juice before serving over cooked gnocchi if desired.
