  • 400 grams lean ground beef
  • olive oil
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoon dried parsley
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice

Instructions

  1. In a large bowl, combine ground beef, minced onion, garlic, egg, soaked bread crumbs in grape juice, cumin, oregano, parsley, salt, and pepper until just mixed.
  2. Shape the mixture into uniform balls about the size of golf balls.
  3. Heat olive oil in a pan over medium heat and brown meatballs for about 10 minutes.
  4. In another pot, melt butter and whisk in flour until smooth. Gradually add hot water or stock while whisking until thickened. Stir in lemon juice and season with salt and pepper.
  5. Add browned meatballs to the lemon sauce and simmer on low for about 10 minutes before serving.
