2 lbs apples (preferably Gala, Fuji, or Cortland)
10 cups water
2 tablespoons brown sugar
4 inches fresh ginger
2 cinnamon sticks
2 teaspoons black peppercorns
Instructions
Wash and quarter the apples, removing cores (leave skins on).
Instant Pot: Combine apples, ginger, brown sugar, cinnamon sticks, black peppercorns, and water in the pot. Lock the lid and cook on high pressure for 18 minutes. Manually release steam.
Stove Top: In a stock pot, combine all ingredients. Bring to a boil, lower heat and simmer for about 30 minutes until apples are soft.
Strain tea into a pitcher using a fine mesh sieve.
Allow to cool completely at room temperature before storing.
