  • 1 box (15.25 oz) yellow cake mix
  • 1 box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • For the glaze: 2 cups powdered sugar
  • 23 tbsp fresh lemon juice
  • Optional milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, mix together the yellow cake mix, instant lemon pudding mix, eggs, vegetable oil, water, fresh lemon juice, and lemon zest until smooth.
  3. Pour the batter into the prepared pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  4. While baking, whisk together powdered sugar and fresh lemon juice (and milk if using) for the glaze.
