  • 4 boneless skinless chicken breasts
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • 2 tablespoons olive oil
  • Salt and pepper (for seasoning)

Instructions

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook chicken for 3-4 minutes on each side until golden brown; remove from pan.
  3. In the same pan, sauté garlic for about a minute, then add chicken broth, lemon juice, and zest. Bring to boil, reduce heat, stir in heavy cream and simmer for 5 minutes.
  4. Add fresh spinach; let wilt for about one minute. Return chicken to the pan, spoon sauce over top, cover, and cook for another couple of minutes.
  5. Garnish with additional Parmesan cheese and serve warm.
