  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken breasts and coat well. Allow to marinate for at least 30 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for 5–6 minutes on each side until golden brown and cooked through. Let rest before slicing.
