  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • ½ red onion, finely diced
  • ¾ cup kalamata olives, pitted and halved
  • ¾ cup crumbled feta cheese (optional dairy-free)
  • Fresh parsley and mint
  • ⅓ cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or maple syrup)
  • Dried oregano
  • Ground cumin

Instructions

  1. Drain and rinse the chickpeas; pat dry.
  2. Dice cucumber, bell peppers, and onion; halve cherry tomatoes and olives.
  3. Chop parsley and mint.
  4. Whisk together lemon juice, garlic, mustard, honey (or maple syrup), oregano, cumin, salt, and pepper in a bowl; slowly drizzle in olive oil while whisking until emulsified.
  5. In a large bowl, combine chickpeas and veggies; pour vinaigrette over the top and toss gently to coat.
  6. Fold in feta cheese just before serving.
