  • 1 baguette (sliced into 1/2 inch thick rounds)
  • 1 tbsp olive oil
  • 250 g Baby Bella mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup apple vinegar
  • 1 package brie cheese (sliced)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil. Toast for 3-5 minutes until golden brown.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about one minute. Add mushrooms and cook until golden brown, approximately 5-7 minutes. Stir in apple vinegar and season with salt and pepper.
  3. On each toasted baguette slice, place a slice of brie and top generously with the mushroom mixture.
  4. Return to the oven for an additional 3-5 minutes until brie is melted.
  5. Garnish with chopped parsley before serving warm.
